A Time for Change

So, it’s still January, most of us are holding strong to our New Year’s resolutions, some are long gone.  But nonetheless things are changing.  The seasons advance almost unnoticeably. We are able to see transition in such detail here in Florida.  Just like we see in the detail in our growing vegetables.  We are deep into the ground with our root veggies at this point (pun intended) and loving it!

Orange Carrots
When I was a kid there was something extremely comforting in eating piping hot carrots that “actually tasted like carrots” as my friend, Brenda, would say.

&&&&&&&&&&&&&&Purple cauliflower (botanical name Brassica oleracea var. botrytis) is a cool-season biennial cruciferous vegetable belonging to the plant order Capparales. Purple cauliflower’s color comes from the presence of the antioxidant anthocyanin, which can also be found in red cabbage and red wine. Yum!

Usually the last Sunday of every month, but because of the holidays our time line has changed just a bit.  This Supper Club  is in collaboration with Chef Derek Barnes of Derek’s Rustic Coastal Cuisine! YUM!!

What is our supper club you ask?
Dinner Bell Supper Club is a monthly supper limited to 20 guests in our beautiful barn.  These monthly meals will highlight our local produce as well as dairy, meats and fruits produced in our amazing Florida region.  Supper will be prepared by our farm manager, Christa Leonard and other guest chefs that will highlight our seasonal offerings.
We trade for local produce and are saving sliding scale seats at the table for farmers and work trade!

Food For Thought

Imagine if we had a food system that actually produced wholesome food. Imagine if it produced that food in a way that restored the land. I consider myself a pretty good cook but I’m running out of ideas to use all of my CSA veggies. I love your cabbage but I’ve already made coleslaw twelve different ways. Any suggestions on what to do with January’s harvest?Hey Shawn,
Thanks for writing in. I love GCF’s cabbage, too. Anytime I get stuck for recipes or ideas I tend to look East for inspiration. Asian cuisine covers so many bases and is all about simple ingredients bringing bold flavors to the table. I recently started working with kimchi and found it to be ultimately rewarding as well as a great practice in patience. Kimchi is a Korean side dish that is fermented in spices and a lot of salt. It takes weeks of sitting around in your kitchen (or buried in the backyard) to get really powerful flavors but the wait is absolutely worth it. Use my recipe as a starting point but add more sweet or spicy to truly make it your own.

Chef Patrick’s Kimchi
Yields 2 Quarts
Ingredients: 12 cloves of garlic, whole, peeled
2oz ginger, peeled, chopped
2 Tbsp White Miso
1 Tbsp Dried Bonito Flakes (or 2 Tbsp Fish Sauce)
2 Tbsp Crushed Red Pepper
8 Fl Oz Apple Juice
1 Cup Kosher Salt
2 Quart cool water
2 1/2 LBS Green Cabbage, shredded
1/2 LB Carrots, peeled, shredded
1 LB Turnips, peeled, shredded
1.   Place veggies in a large airtight container. Pour salt over veggies covering them as much as possible. Then cover with cool water making sure to completely submerge the mixture.
2.   Let this sit for 30 minutes to an hour. Place the remaining ingredients in the blender and pulse until you get a chunky consistency.
3.   Drain the water from the veggie mixture and press out excess moisture. Pour the sauce from the blender over the mix and fold to fully incorporate.
4.   Seal the mixture in the container with plastic wrap or a secure lid. Leave out at room temperature for a minimum of 48-72 hours. You can then refrigerate it or leave it out as long as you want. The fermentation process has made it safe to eat at this point so enjoy! But the longer it ferments the more unique flavors you achieve so have fun with it!

(Note from the Chef: The aroma from the container when you first open it will be extremely pungent. Prepare yourself.)

 Here’s to 2016 and our best season yet!

2015 proved to be a wonderful success for our farm.  We are continuing our outreach into the community and sharing our success with new community partners. We are creating a strong farm family with our members and that grows every year as we are pushed to do our best for you.  It is a beautiful thing to see the same friendly faces at the markets each week.  Thank you so much to our amazing community for making 2015 a great year! And let’s bring GCF into 2016 with just as much support and love!

Dinner Bell Supper Club is a monthly supper limited to 20 guests in our beautiful barn.  These monthly meals will highlight our local produce as well as dairy, meats and fruits produced in our amazing Florida region.  Supper will be prepared by our farm manager, Christa Leonard and other guest chefs that will highlight our seasonal offerings.

Well, we had a beautiful two day winter here in Southwest Florida this weekend.  
As things once again start warming up we are back out into the fields beginning new projects and watching others flourish.  This time of year always reminds us to give what we can and appreciate what we have.  I think that rings true to our farm energy.  We think of all of you as a part of our extended family (Farmily).  So, here’s to a fantastic week full of peace, love and happiness!

Everyone, Meet Lea!

Lea made her way to Bradenton after attending Nova Southeastern University in Davie, FL. Currently, she is continuing her studies at SCF. Lea is double majoring in Business Administration and Pre-Medical Biology.
Her passion, enthusiasm and relatable demeanor are what drives her to live without limitations. She loves God, which relays into her enjoyment of learning, her community and her wholesome living philosophy.
Lea learned about Geraldson Community Farm when she attended the Local Evolution Craft Market at Darwin Brewing Company. After meeting lots of new friends at the market, she discovered a volunteering opportunity at the farm to manage the Community Supported Agriculture (CSA)member pick-up on Wednesdays. Lea visited the farm, met Christa (operations manager) and began volunteering on more than just Wednesdays.  She dove right into it and really enjoyes getting her hands dirty! The farm is truly her thing and it just clicked.
Lea loves spending time with her friends and volunteering with other like-minded young adults. She also works part-time as a bakery clerk and a barista.
Just like the farm’s vegetables we thrive from, Lea is eager to help create new opportunities for our thriving community.

 Next time you are at the farm please make time to say hello to Lea and befriend her. And she will be  enthusiastically managing the Local Evolution Craft Market (where it all began) every second Friday of the month from 5-9pm.

Building a CommunityEveryday at GCF is an adventure.  We wake up early (’cause that’s what farmers do), look over the land, plan the days work and if something comes up, we work it out!  This is all thanks to such a wonderful community.  We share our triumphs and tribulations and our victories are yours.  We are all working together for something bigger than ourselves and that is what building a strong community is all about. Each one of you whether with a big or small contribution helps us be the best we can be and continue to not just grow, but flourish.

Ladies and Gentleman, may I introduce to you, Donatello and Guido!  These little guys will be joining the GCF team very soon! 🙂  The more the merrier, we say!

And as always, we would love to hear from you! Please tell us how you are enjoying and participating in the farm this season.  Or how you would like to.  Share a funny or interesting story you have about a volunteering or attending an event. 🙂

The event will feature chefs from Indigenous, Made, Louie’s, The Cottage, Drunken Poet Café, Mattison’s and Michael’s On East. Chefs will each prepare small plates of natural and organic chicken, pork, beef, lamb and other varieties from Turtle Beach Natural Foodservice and vegetables from Geraldson Community Farm!  Come see what our area’s finest chefs are creating and how they are making a difference in the food community! A portion of the proceeds benefit Chefs Collaborative scholarship and education programs.

We trade for local produce and are saving sliding scale seats at the table for farmers and work trade!

A Good Buzz 

We are feeling pretty good about everything happening on the farm this week!  CSA is off to a great start as we approach week 3! Speaking of a buzz, we want to remind you that you can pick up Dave’s GCF’s honey as well as other bee related products at our Wednesday CSA pick-up on the farm (3pm).  And Glenna with Yolker’s Wild will also be there for all of your goat cheese needs.
The fields are busy as we and our volunteers are harvesting and again, seeding.  The buzz in the air is contagious and we are so excited making to be making such progress.  Keep sending those good vibes and we will keep growing you yummy, organic, veggies! Deal?

Farming and Pickling with Saint Stephen’s

Last week 
Saint Stephen’s Episcopal School came out to the farm to learn about local agriculture. They toured the farm and harvested some delicious green beans!
Then we got to hang out with them at their school to teach them all about pickling! Loving the farm to school connection!

Hello, everyone! We just wanted to take some time to introduce you to Poppy’s friend, Juniper. You may have seen her hanging around GCF or at the Phillippi Farmhouse Market on Wednesdays.
Today is Juniper’s 2nd birthday.  She is a Beagle/American Foxhound mix from Ruff World Animal Rescue in Winter Park, FL

This week, GCF proudly began our CSA program!  We are so excited to share what is popping up in our fields with the community.  It is seriously amazing to be able to work the land and reap the rewards!  There is such a strong feeling of pride we share when preparing for CSA and our markets and being able to tell the story of how these vegetables came to be.  We hope you are enjoying your CSA’s and if you are not already involved in our CSA program please come see us at any of our four local markets! 🙂

I make food with passion and you’ll taste it in every bite. If I can change one person’s mind on a specific food, I feel I’ve succeeded; tell me a food you despise and I’ll make you love it before the day’s done.
